Part 2 – Deep Dive into the Microbiome (90 minutes) 

  • A comprehensive overview of the microbiome and gut-immune axis with special emphasis on dietary strategies to improve diversity and boost keystone species.
  • Understanding your patient’s most important microbiome keystone species with an in-depth discussion on Akkermansia, Faecalibacterium, Lactobacillus, and Bacteroides.
  • How to assess the microbiome with the underutilized standard lab test of stool pH, and how to optimize that with food and prebiotics.

Part 3 – How to Use Food as Medicine for Autoimmunity (75 Minutes) 

  • Incorporating an evolutionary perspective to understand why a plant-based paleo diet is what human beings have primarily evolved to eat.
